A little prep ahead leads to a quick dinner latter!

I did all my food prep on Thursday this last week. I love doing this, it saves so much time latter in the week, or any day you just don’t have enough time!  I cooked up some steak, chicken, and shrimp on sticks. I made my favorite chicken salad up and portioned it out in containers. That way I can just throw it on some spinach I have on hand. I also made my salsa then.

Saturday was one of those days that just got away from me. I had a table at a Health fair at the gym I joined here in Charleston, SC. Once I got home I had a quick lunch and then went out to run some errands. It was 6 pm by the time I got home and the kids (aka the hubby) were starving! I tossed some cheese on organic tortilla chips in the oven, heated up some black beans in the microwave, and warmed up the shrimp. For me and my husband I made us some big Spinach salads using everything. It took about 15 minutes to do everything! Talk about fast food!


My favorite lunch


My favorite lunch is a mix of leftover I had one day, Its a take on Chicken Waldorf Salad. You can make it your own with what you have on hand so its very versatile and great for leftovers! If I have carrots on hand I usually add those!

Diced Chicken, pear, apple, broccoli, walnuts, mayo, rains. Season to taste with pepper and rubbed sage.

Serve with lettuces wraps!

I Love Cookies!


Who doesn’t enjoy a good cookie? But I do not like the guilt and yuck feeling after, especially when you eat them all… yes you have done it too, I’m sure! So don’t judge! Would it not be great to have a healthy , guilt free cookie!? Is that too much to ask? Is it possible? Well I have to say I have stumbled across someone who found a simple solution! Thanks to The Burlap Bag who has come up with – the TWO ingredient cookie! WHAT??!!


Bananas and Oatmeal!

You can add in chocolate chips, nuts, or spices as you like to dress them up as well!


Mash 2 large old bananas in bowl
Add 1 cup of quick oats

Optional add ins:

-a handful of chocolate chips
-crushed walnut pieces


The Burlap Bag suggested to use a well greased cookie sheet, I use parchment paper and it worked great! No sticking!

Bake at 350 for 15-20 mins.

Me and my son Keanu were the only ones still awake in the house when we made them- it was only 8:15 at night too! But that was just fine because we enjoyed them! I was nice enough to leave 2 for my husband who ate them before he left for work this morning! They had a great flavor and texture! I can see many more flavor experiments in the near future!

Chicken Wings Please!

Chicken Wings Please! Like most guys my husband like to dive into some wings every so often. I actually had my first chicken wing experience with him when we were engaged, at Buffalo Wild Wings or as we call it B-dubs.  When B-dubs came to Hawaii we indulged a few times, especially because some of their sauces are GF.  We have been to the one out here in Charleston, but they allow smoking inside (at the Bar only, but its in the air) so I don’t think we will be going back any time soon, especially with the kids! So I am forced to be better, not eat out and save money- all good things!

So here is my Better Chicken Wing recipe:

I use the SoG Zesty Barbecue “Zause” Recipe- I came across it about 3-4 years ago and its the BEST! Sugar free and Oh so easy to make!

SoG Zesty Barbecue Zauce

– 1 6oz can tomato paste (preferable organic)
– 1 to 1.5 cups of beef stock (you can make it (keep from pot roast-or if you buy, you want it without salt)
– 3 Cloves Garlic
– .5 of an onion
– 2 tablespoons Dijon mustard
– 2 tablespoons apple cider vinegar
– 1 tablespoon Extra Virgin Olive Oil (EVOO)
– 1 teaspoon sea salt
– 2 tablespoons chili powder

1. Dice your onions and garlic as fine as possible. You want your BBQ sauce a little chunky but the more fine you dice these, the better the flavor will spread through the entire sauce.
2. Combine all ingredients in a sauce pan. Whether you use 1 cup or 1.5 cups of beef stock will depend on how thick you want your sauce.
3. Bring sauce to heat on stove with a low setting.
4. Cover and simmer. Stir frequently and taste regularly. The longer you simmer, the more consistent your flavor will be. I simmered for 20-30 minutes.
Coat the wings in a bit of “Zause” and bake 500 for 30-40 mins. Internal temp should be 165 and crispy on outside. I kept turning mine over and basting. Serve with veggies and quinoa or brown rice!

I should be able to shop at the store without a P.H.D. in chemistry.

The one reason why my pantry looks like I have not been shopping in weeks, why my kids mostly eat fruit and peanut butter for snacks and why I have panic attacks when grocery shopping (seriously it’s happened!) Is because the companies that make the food we find on our grocery store shelves use chemicals when its not necessary!

Weekend Breakfast


I love the weekends. We get to sleep in till 7am! Yes, that is Sleeping in around here! I usually have an AdvoCare Breakfast Meal Shake in the morning during the week because there is no time, but on the weekends I love to cook up some eggs or make some GF muffins. This weekend I made at the kids request, Chocolate Chip GF muffins. I’m not a natural baker like my friend BJ who can whip up some yummy GF things from scratch. Other wise if your like me, I rely on the mixes, I love the King Arthur line!


Slow Cooker Freezer Meals: Oh so easy!


The biggest draw back to healthy eating is not being prepared. It seems as my family’s grows, the more I add to my plate, and to my kids schedule the less time I have after 3pm. Dinner started to become the dreaded meal. Especially after we started eating clean. Eating clean means you have to cut, chop and cook! No more microwave dinners, dinners from a box, frozen pizza or nachos every night. When I saw a Freezer meal post pop up on my Pinterest new feed (LOVE PINTEREST ) I clicked on it intrigued. Read through the post and thought  “I can do this! One day to shop and prep and then dinner for a month- AWESOME!”

This worked out great seeing we were staying in a TLF (Temporary Lodging Facility for all you non military) in our new duty location and we were on no schedule and constantly on the road!

So of course I had to redo it all trying to get it perfect (I’m sure its not but please don’t burst my bubble). I made all the recipes, most we liked, some we didn’t, I took those out and added some of mine, the shopping list was not complete, ( I hope mine is) but it was GREAT! ….If I remembered to pull out the next night meal from the freezer and place it in the fridge the night before and then put it in the crock pot the next morning. Some meals went in frozen and seamed to do just fine, we never ate cold food and we didn’t die from food poisoning! AND…. ahhhhhh I was not RUSHED in the evening! Yep I poured my self a glass of wine and toasted myself!

Time to Blog…

The time has come to start blogging. Why? I’m not really sure, its not like I have it all figured out, nor am I an expert. I struggle each day to keep it all together. I want to be perfect, don’t we all?! Unfortunately reality hits us at some point and we realize that is IMPOSSIBLE! No mater where we are in our path to Health I feel we can share and learn from each other! Encouragement and support is the one of the best things that can keep us going! Over the last year and a half many of my friends and family have turned to me for support and encouragement as they watched me become better with my nutrition and fitness. Through that I have shared with them the things I HAVE gone through, to help them overcome what they are going through. I found though people thought I did not struggle anymore. That I was up on this pedestal, a goal to obtain, but the truth is I DO still struggle. Its how we work through all that gets in our way and how we over come it. THAT is what we should all strive to achieve. When you know people go through the same thing as you, it makes that struggle a bit easier to over come, it puts a light on the goal at the end of the tunnel. So join me in over coming those daily struggles, because we ALL have them!
